Veggie, Bacon & Cheddar Frittata


Hi friends! Boy, do I have a super delicious recipe for you. I realized we had a crazy amount of eggs in the fridge, plus tons of veggies, and I got to thinking of a frittata for some reason. I've never made one, but I figured I could do it while using up all those eggs and veggies. After lots of internet researching I finally gave up on finding a recipe, and I decided to just go with it.

The result? John walked past the kitchen while it was cooking and went, "Whoa! Come smell this! It smells gooooood!" I agreed with him, but when he "mmmm'd" about 5 times in a row while eating his first few bites, I knew I had a winner. I was quickly told I needed to make this again "very soon," and I'm looking forward to all the variations I can play with. You can make this as healthy or indulgent as you like, but it's super easy and a great way to sneak protein and veggies into your diet. Try it! And tell me if you come up with a good variation, please!

Veggie, Bacon & Cheddar Frittata
Recipe by Call Me Mrs. Rapp
Serves 3-6, depending on portions*
*add more eggs for more servings - up to 18 eggs total - plus more veggies/additions




Ingredients:
*8 eggs, beaten
*4 pieces bacon, cooked and crumbled
*3 tbsp fat free half and half
*3 tbsp fat free skim milk
*1-2 tomatoes, chopped
*4 oz baby spinach
*1/2 large onion, diced
*7 asparagus spears, chopped into bite-size pieces
*1/2 cup cheddar cheese + 1/4 cup cheddar cheese

Preparation:
*Preheat oven to 350 degrees.

*In a large, nonstick oven-proof skillet, sautee onions and asparagus in olive oil until onions are softened. Add spinach, cooking until almost wilted. Add tomatoes and cook about 1 minute.

*Beat eggs, half and half and milk in a bowl. Combine with 1/2 cup cheese and bacon. Pour over veggies and stir with a rubber spatula.

*Place in oven and bake for 25 minutes. Sprinkle with remaining cheese and cook another 3-5 minutes, until set and knife comes out clean.

  1. Yum! I've been thinking about making something similar to this for a while. Back when I was working, i was trying to come up with an easy breakfast I could eat on the go. i read somewhere about baking eggs and veggies, but do them in silicon cupcake cups. Then just put them in little baggies for the week, pop them in the mircowave and you can eat them on the run. Haven't tried it yet but I'll let you know when I do.

    1. It was so awesome! We ate it in less than 24 hours. Well, I had 1/3 and John had the rest, haha. Next time I'm totally doing it with more eggs to make it thicker - and more veggies, too!

  2. I've never made a fritatta and have been wanting to make one. Looks like this will be on my list for next week!

    1. It was my first time, too! Totally worth it. We absolutely loved it, and it's already on the menu for next week. Great way to clean out the fridge of veggies on the verge of going bad, too.
