Moroccan Salmon Salad



Yikes! This recipe is from May - still editing photos, eek! - but it's a great to time to share it. The flavors are so unexpected and refreshing! Such a great meal to kick off your week, and so very simple to do. Thanks to Jourdan for posting this, and for Ally, who gave her the original recipe!

Moroccan Salmon Salad
Recipe by Whole New Mom, via Jourdan Leigh in the Kitchen
Serves 2

Ingredients:
Salad:
*2 salmon filets
*lettuce of choice (I used mixed greens)
*1/2 cucumber, peeled, seeded and diced
*red onion, sliced
*handful of grape tomatoes, sliced in half
*1/3 cup green beans, cooked and chopped
*feta cheese (goat cheese is also great with this!)
*2 tbsp pine nuts 
*olive oil and salt + pepper (for salmon)

Morrocan Vinaigrette:
*1/3 cup olive oil
*1 Tbsp lemon juice
*1 Tbsp apple cider vinegar
*3/4 tsp paprika
*1/2 tsp ground cumin
*1/2 small clove garlic, finely minced, or a pinch of garlic powder
*1 very small pinch cayenne (ground red) pepper
*2 tablespoons tightly packed minced fresh parsley (or 2 tsp dried parsley)
*1/2 tsp salt, or to taste
*lots of freshly ground pepper (optional)

Preparation:
*Preheat oven to 375. Brush salmon with olive oil, and sprinkle with salt and pepper. Roast in the oven for 12-15 minutes, or until it flakes easily with a fork.

*Combine all Moroccan vinaigrette ingredients - except olive oil - in a small bowl. Slowly whisk in olive oil, until all ingredients are blended. Adjust dressing to taste.

*Combine all salad ingredients and divide in two bowls. Top with salmon and drizzle with Moroccan vinaigrette. Enjoy!
