WIAW: Dinner Party!


Welcome to another WIAW! Thanks for hosting, Jenn! This is from yesterday's eats, and I've been really doing my best to cram more veggies into my diet. I think I did a pretty good job of this yesterday, but you can decide for yourself when you see.





Breakfast (8:40 a.m.): This should come as no surprise, but I started my morning with a Chobani 0% Apple Cinnamon yogurt. I just love all the apple chunks in it, and it really does keep me full until lunch.


Lunch (11:15 a.m.): This was a colorful one! I enjoyed carrots, celery with peanut butter, a hard-boiled egg and some fresh strawberries. Yummy!


Snack (3:40 p.m.): I had some more celery with peanut butter and some carrots while I was in my sub-group meeting with the other first and second grade teachers.

After my meeting it was time for a sweaty workout at the gym! I started with 30 minutes on the elliptical and then moved onto some strength training for the next 30 minutes. All in all it was a good workout!

Dinner (7:30 p.m.): Some of my sorority sisters and I do a monthly pitch-in dinner party. We rotate who hosts, and today my friend Swade hosted! We each decided to bring appetizers and make a meal out of it. What a fun and yummy dinner!

I started by snacking on lightened-up dill dip that I brought (recipe coming soon!) with veggies and some Hawaiian bread. [Note: these pictures are of the entire spread, not my portions ;)]


I followed that up with Swade's tasty appetizer [a yummy quesadilla!] and some of Lindsey's great creation [roasted red pepper and olive tapenade], which I forgot to snap a picture of.



Once everyone else arrived we filled up our plates [cucumber salad, veggies and dill dip, shrimp tarts], poured some wine and headed to the family room for some chatting and eating. We laughed, caught up on stories, noshed and had the best time together. I love our dinner party nights!


Right before we left I served up my famous Golden Vanilla Butter Cake (which actually has no butter in it, and is super moist thanks to sugar-free vanilla pudding) to celebrate all the April birthdays - Swade, Ally, Lindsey and Jourdan, who was home sick unfortunately.


All in all, it was a fantastic night. I'm so grateful for such good friends. Love you girls!

  1. Mmmm quesadillas are my all-time favorite food! Yours looks great...it's making me crave one!

  2. A vegan dinner party is definitely something new and healthy! I’d definitely ask my caterer next time to prepare a vegan menu for my mom’s upcoming 47th birthday, which is perfect because, lately, she’s started this yoga and healthy eating advocacy in the family. (^_^,)
