Caramelized Veggie, Prosciutto and Alfredo Pizza



One of John and my favorite things to do is make our own pizza. We've tried a million different combinations, and I try to share some of our favorites. This definitely makes the cut, and is packed with veggies, creamy sauce and golden cheese. John loves anything with prosciutto, so that's just an added bonus!

The best thing about making your own pizza is that you can do just about whatever you want. Sometimes my combinations aren't winners, but most of the time I'm pleasantly surprised by the results. Have fun and share any good pizzas with me, please!

Caramelized Veggie, Prosciutto and Alfredo Pizza

Yields 1 pizza 

Ingredients:
*pizza dough
*about 1/2 cup Alfredo sauce (preparation below)
     - 1/2 stick butter
     - 1/2 cup cream
     - 1 cup shredded Parmesan cheese
*1 cup shredded mozzarella cheese
*about 1/2 cup spinach, cooked (I used frozen and simply dethawed!)
*extra 1/4 cup shredded Parmesan (optional) 
*about 1/2 cup cremini mushrooms, sliced
*about 1/2 red onion, sliced
*several pieces prosciutto, torn (I used about 4)
*1/2 tablespoon butter
*1 tsp brown sugar

Preparation:
Alfredo Sauce: In a saucepan or skillet, warm butter and cream over medium heat. Season with salt and freshly ground black pepper. Once warmed, add 1 cup shredded Parmesan cheese, whisking until combined. Remove from heat.

Caramelized Veggies: In a skillet, melt 1/2 tablespoon butter. Add mushrooms and cook over medium-low heat for about 5-8 minutes, until slightly softened. Add sliced red onions and brown sugar, and cook an additional 5-7 minutes, until softened and caramelized.

*Preheat oven according to your dough. Then, assemble the pizza!

1. Roll out dough on a floured, flat surface. (Transfer to pizza stone, if applicable).
2. Spread about 1/2 cup Alfredo sauce on dough.
3. Sprinkle spinach across sauce and dough.
4. Add caramelized veggies (mushrooms and red onions).
5. Top with mozzarella cheese (and remaining 1/4 cup Parmesan, if desired) and prosciutto.

*Bake according to your dough's directions - our pizza took about 15 minutes. Let sit for 2 minutes before slicing. Then serve and enjoy! Optional: drizzle a little extra alfredo sauce on top of the pizza before serving. This was John's addition and it was delicious!

  1. Lauren, this looks so good! I don't really like mushrooms--what other veggies do you think would work well caramelized on this pizza?
