WIAW: Spring Break Day Two


Happy Wednesday, and here's to another What I Ate Wednesday, hosted by Jenn! I tell you, I am enjoying this spring break. It's been so relaxing and exactly what it should be. This month WIAW is aiming to "add an extra cup" of veggies to your daily diet. I did my best, but I could definitely use more. Plus, I was missing my fruit today (does cran-apple juice count?)! Note to self: must eat a Cara Cara orange tomorrow!



 
Breakfast: This was eaten on the fly and nothing new around here: Chobani Greek yogurt! I seriously can't get enough of it. It keeps me full for the morning and tastes oh-so-delicious.

Snack: There wasn't one! I was too busy getting a haircut, complete with a new color - back to rich brown! I enjoyed my time with lighter hair, but I really did miss the darker color, especially when I looked around our apartment and all the pictures were filled with my darker hair.

A look in and out of sunlight. What do you think?

I ran some errands afterward - returns and fun stuff like that - and decided to save my mani/pedi for tomorrow. Make it a few days of pampering instead of just one. ;) I also skipped out on the gym (blarg) because I can't wash my hair for 24 hours (keratin treatment) and the thought of keeping my hair all sweaty for the rest of the day and tomorrow was just too much to bear. Back to the gym I go tomorrow!

Lunch: After my fabulous haircut, thanks to the always amazing Wendy, I was ready for a nice lunch. I made myself a salad with tomatoes and pine nuts, topped with homemade dressing (1 tbsp olive oil, 1 tbsp red wine vinegar, 1 clove minced garlic and 1 tsp dijon mustard, all whisked together). To get some protein I made some of Ellie Krieger's popcorn shrimp with chili-lime dipping sauce. To be honest, I wouldn't call this popcorn shrimp. I would call it healthy, crunchy shrimp. Good, but not what you're expecting if you're looking for regular popcorn shrimp.


After lunch I ended up taking some time to read and fell asleep. Gotta love unplanned naps, especially when my little stinker (Hoosh, not John) joined me!

Dinner: Chicken fajitas! This was a snap because I had the main work going all day - chicken cooking in the slow cooker! If you haven't already tried this, you must. It's SO easy! I pulled the chicken out of the slow cooker, shredded it with a fork, and seasoned it with salt, pepper, cumin and chili powder.

Sides/additions to the fajitas were perfect, filling and super tasty. I cooked up some bell peppers on the skillet with a smidge of olive oil. I also served these with some sweet corn, lettuce, homemade guacamole, tomatoes, a little cheddar cheese and a bit of nonfat Greek yogurt (instead of sour cream). Put that together with the chicken on a La Tortilla Factory low-carb high-fiber whole wheat tortilla (what a mouthful!), and you have a winner! One was super filling.


"Dessert": I didn't actually have dessert, but about 2 hours after dinner I decided I wanted another fajita - they're so good! Instead of a whole one, I cut a tortilla in half and filled it up again. It was just what I needed. The perfect end to a great day!
